A cycle of events on the occasion of the exhibition The Street. Where the world is made

Contro il cibo kultura, Umberto Montano, President of Mercato Centrale Roma, and Kotaro Noda, Michelin-starred chef who made of cultural fusion a pivotal feature of his cuisine, debate on how the relationship between the cuisine and the territory in the fast food era is changing and on the standardization of traditional cuisines in favour of one global cuisine.
